Here is the recipe along with a couple of others that was posted with it. I made a few changes to the Arroz Con Pollo because I didn't have the ingredients required. I used 4 chicken breasts, 4 cloves garlic ( we love garlic ), 2 - 14 oz. cans of whole tomatoes ( I broke the tomatoes up ), and 1 - 4 oz. jar sliced pimentos, drained. Arroz Con Pollo (Spain)
one 3-lb. chicken, cut into pieces salt and pepper 1/8 tsp. paprika 1/4 cup olive oil 1 clove garlic, minced 1 medium onion, chopped 2 cups water 3 cups canned whole tomatoes 2 chicken bouillon cubes 1 bay leaf 1/4 tsp. saffron 1/2 tsp. oregano 2 cups raw rice 1 package frozen peas, defrosted 3 pimientos, cut in pieces
1.Season chicken with salt, pepper and paprika. In a skillet, heat oil and brown chicken on all sides. Remove to a baking dish. 2.To the skillet, add garlic and onion and saute until tender. Add water and heat while scraping loose the brown particles. Add tomatoes and their liquid, bouillon, seasonings and salt. Bring to a boil and pour over chicken. Add rice and stir. Cover tightly. 3.Bake at 350 degrees 25 minutes. Uncover and toss rice. Stir in peas and pimientos. Cook 10 minutes longer.

Green Beans in Tomato Sauce (Spain)
1 tsp. salt 1 lb. green beans, trimmed and cut into 2" lengths 2 Tbs. olive oil 1/4 cup chopped onions 1 tsp. chopped garlic 4 medium tomatoes, peeled, seeded and chopped 1 Tbs. chopped parsley 2 tsps. sugar pepper
1.Boil beans in salted water for 10 minutes. Drain. 2.Cook onions and garlic in olive oil for 5 minutes. Add all remaining ingredients and cook for 5 to 10 minutes until thickened. 3.Stir in beans and simmer for 2 minutes.

Pork with Cumin and Cilantro (Spain)
2 lbs. boneless pork, cut in 1" cubes 1 Tbs. oil 3/4 cup dry white wine 1-1/2 tsps. ground cumin 1/2 tsp. chopped garlic 1 tsp. salt pepper 5 thin lemon slices, quartered 2 Tbs. chopped cilantro
1.Brown pork cubes in hot oil until brown on all sides. Add 1/2 cup wine, cumin, garlic, salt and pepper and bring to a boil. Cover, reduce heat to low and simmer for 25 minutes. 2.Add remaining wine and lemon slices and cook over high heat turning meat constantly until sauce slightly thickens. Stir in cilantro and serve.

Saffron Rice (Spain)
2 Tbs. olive oil 2 Tbs. finely chopped onions 1-1/2 cups raw long-grain rice 3 cups boiling water 1-1/2 tsps. salt 1/8 tsps. ground saffron
1. Heat oil in skillet and cook onions about 5 minutes, or until transparent but not brown. Pour in rice and stir 2 to 3 minutes until all grains are coated well with oil. 2.Add water, salt and saffron and bring to a boil. Cover tightly and reduce heat, simmer about 20 minutes or until all liquid has been absorbed. Fluff rice with a fork before serving.
