My mother died several years ago and I use many of her recipes -- some as she made them and some with a few changes.

3 - 4 fresh tomatoes (or) 1 can diced tomatoes
1 green pepper
1 med onion
1/2 sweet red pepper
salt and pepper to taste
1/2 t. basil
juice of 1/2 lemon
2 t. brown sugar (I use Equal sometimes)
1 -2 ribs celery - peeled
olive oil
butter
Enough Zweibach to make 1 cup of coarse crumbs
OR
2 cups of cheese croutons

Saute chopped veggies on olive oil just until they lose their crispness.
Cut peeled and seeded tomatoes into pieces (or use can of tomato pieces)
Add tomatoes to sauted fresh veggies. heat to a simmer and stir in rubbed spices, lemon juice, and sugar.
Stir in crumbs or croutons and turn into Pam sprayed casserole. dot with butter and cover with lid or foil. Bake for 1/2 hour at 325 or 350 depending on what else is in the oven. If using 350, check a fter 20 minutes of baking time.
