I did this a while back...or almost this recipe anyway. I added diced zucchini and leeks in with the spinach and mushrooms and used a very low fat cheese called Quark in place of the ricotta.....I was on a diet at the time. It's spanakopitta without the buttery stuff!!! (Good but calorific I know...)
