Hi Pat and Lee,
Crawfish are distant cousins to lobsters. The "tails" refer to the meat inside the tail section of this crustacean, just like a lobster, only the "meat" is about the size of a good-sized shrimp tail. A pound of tails sells anywhere from $4 to $10, depending on the time of year for "crawfish season". When the Acadians were exiled from Nova Scotia, they made a long, hard journey and settled here in south Louisiana. Being poor, ignorant and desperate, they were forced to live off the land. Lucky for us too...my ancestors created the most delicious food in the world...Cajun and Creole. Since I can't list particular websites here, do a search engine check on "Crawfish", "Cajun", "Creole", "Louisiana", "New Orleans", etc. We have everything from Pecan Pralines, Crawfish Etouffee, Jambalaya, Gumbo, Shrimp Po-Boys, New Orleans Muffalettos, Beignets, Pecan Pie, Red Beans & Smoked Sausage...the list is endless.
