I remember those days well!!

Some things I've done:

1. Make a acream sauce from flour, evaporated milk, butter and add about 1/2
to 1 cup odds and ends of cheese and a small can (about 6 oz.) of stewed tomatoes (or a couple squirts of catsup in a pinch) a pinch of onion powder, and a shake of Bacos and serve over toast, english muffins, or whatever I have. A slice or 2 of cooked and crumbled bacon is even better!!

2. Cook enough rice to make 2 cups and add 1 can of cream soup, a shake of onion powder, and:
tuna -- odds and ends of cheese grated -- any leftover veggie -- seasoned crumbs
chicken -- broth -- a few sliced black olives -- pimientos -- grated cheese
beef -- beef broth -- cheese -- tomatoes -- garlic --canned mushrooms

Substitute noodles, barley, hash browns for rice

3. 1/2 # of gr. beef makes 2 little meatloaves -- meat, 1/2 cup binder(crumbs,
oats, cereal, bread) rice won't blend in but will work well too, salt and pepper,
milk or catsup (about 1/2 cup total)celery and carrots and onion chopped --
total of about 1/2 cup, 1 egg. Mix and form two little loaves on a pan . Bake
at 375F for 45 min. or until done.

4. Buy 1# of hamburger and cook and drain. divide into 3rds or quarters. Use each part to make chili, sloppy joes (catsup, 2 shakes worchestershire sauce,
brown sugar, cerery rib and carrot chopped and sauteduntil soft, 2 T minced onion and shake of garlic powder, about 1/2 cup catsup and 1T brown sugar,
1/4 (or so) t mustard (Coleman's dry use less) and simmer. Good on bun, toast, rice or noodles, goulash (1 1/2 c. cooked pasta, 1 small can tomato sauce,
sauted onion, shake cinnamon, meat, simmer for a few minutes. Good topped with grated cheese. Hamburger soup -- package of hamburger, 1/2 cup (or so)
mixed veggies, mushrooms (optional) small cann stewed tomatoes or squirt of catsup, 1/2 cup some type of small pasta cooked, 1/4 t. basil, shake each of
onion and garlic powder. Simmer and serve with shake of cheese. To stretch for last mnute company, serve over french bread.

5. Things I ALWAYS kept as staples -- sliced black olives, green olives, 6 oz cans of stewed tomatoes, tomato soup, mushroom soup, cream of chicken soup, canned mushrooms, little cans of mixed veggies, seasoned crumbs, eggs,
cream cheese, tomato sauce, velveeta, or other cheese, bacos, instant cocoa mix.

6. I always made a batch of brownies or cookies at the beginning of pay day and froze either 1 brownie or 2 cookies in each baggie. Then near the end of the month, when I would feel like the little match girl(in the old story) a cup of cocoa (with marshmmallows, of course!!) and a brownie or couple of cookies
would helpl!

7. I would also poach a chicken breast, divide it into 2 baggies and use the cut up pieces for chicken salad or a sanndwich later in the month.

8. Tomato soup is good poured over a grilled cheese sandwich served with jello or pudding and a piece of fruit.

9. A daab of left over chili, tuna salad, chicken salad, a cheese slice, a table
spoon of ranch dressing and some cheese (any kind) is good over a baked potato.

10. Bake a potato and slice it in half, scoop out the meat (save it) and top the potato skins with a slice of cheese and bacos, and some ranch dressing and
nuke or broil until the cheese melts.

11. Take the scooped out potato and whisk into heated milk. Add some sauted onion or onion powder, bacos, and thicken with eiither flour or a shaking of instant potato flakes. Stir in a bit of butter and heat until hot.

Sorry this turned out to be as disorganized as it is. If I think of anything else, I'll add it on.

Love,
Kathy/Pa.
