Tennessee Jam Cake with Brown Sugar Frosting
1 cup margarine 1 1/2 cups sugar 1 (10 oz) jar Jam or preserves (Blackberry, Raspberry or strawberry) 4 eggs 2 1/2 cups flour 1 tsp EACH soda, nutmeg, cinnamon and cloves 1/4 tsp salt 1 cup buttermilk 1 1/2 cups chopped pecans
Cream margarine and sugar until light and fluffy. Blend in preserves and eggs. Add combined dry ingredients to creamed mixture, alternately with buttermilk, mixing well after each addition. Stir in nuts. Pour into 3 greased & floured 9-inch layer pans.
Bake at 350F for 30-35 minutes. Cool 10 minutes. Fill and frost sides with Brown Sugar Frosting (below is recipe). Sift powdered sugar on top of cake.
Brown Sugar Frosting
In saucepan Combine: 1 cup packed brown sugar 1/2 cup margarine 1/4 cup milk
Bring to boil, stirring constantly. Remove from heat, cool 10 minutes. Gradually add 3 cups sifted powdered sugar, beating until well blended.
