Chocolate Sponge Cake: 4 egg whites 1/4 tsp cream of tarter 1/4 tsp. salt 1/3 cup sugar 2 egg yolks 1 tsp. vanilla 1/4 cup flour 1/4 cup cocoa Preheat oven - 400 degrees Line 8" square pan with waxed paper Combine egg whites, cream of tartar and salt. Beat until foamy, gradually add sugar, continuing beating until stiff peaks form. In another bowl, mix egg yolks and vanilla. Fold yolk mixture into egg whites. Sift flour and cocoa together and gently stir into egg mixture. Spread into pan, bake about 10-12 minutes (until cake springs back when lightly pressed. Turn out immediately onto cake rack that has been covered with paper towel. Cut into 10 or 12 squares. This is good just as a quick "finger food" snack.
