Hi Angie,
Try substituting fructose for the sugar in any of your regular brownie or bundt cake recipes. Fructose is recommended for diabetics since it is absorbed into the blood more gradually. You can buy it at most large supermarkets. Estee is the brand I use and it comes in a 10 oz. box in two large individual packets. It is also sold in small packets for use in coffee, etc. You usually use 1/3 less fructose than regular sugar. So if a recipe calls for 1 cup of sugar, use 2/3 cup. Another idea is to use concentrated frozen fruit juice in place of sugar in recipes or mashed dates. Do NOT use aspartme (Nutrasweet) for baking. I read that it changes chemical composition when heated and resembles something close to embalming fluid! Ugh! Not something we would care to eat!! Good luck!
