PORK CUBANO 3-5# pork loin roast 1/3 C frozen orange juice concentrate, thawed 2 tsp. finely shredded lime peel 1/3 C lime juice 2 T olive oil 4 cloves garlic, minced 1 T dried oregano, crushed Pierce meat on all sides with the tines of a fork. For marinade: combine orange juice, lime peel, lime juice, oil garlic, oregano, 1 tsp pepper and 1/4 tsp salt. Place meat in a plastic bag in a shallow dish, distribute marinade over all of meat. Seal bag and refrigerate meat for 4 hours or overnitght, turning meat and bag once. Remove meat from bag and reserve the marinade. Roast, uncovered in a 325 degree oven for 2 3/4 - 3 1/2 hours or until meat is done. During cooking baste meat several times. Let roast stand for 10 minutes before carving. I serve this with rice and black beans. |
