Here are two bar recipes that are favorites:

Pecan Pie Squares

Crust:
3 cups all-purpose flour
1/3 cup sugar
3/4 cup margarine or butter, softened
1/2 teaspoon salt

1. Heat oven to 350 degrees. Grease jelly roll pan, 151/2 x 101/2 x 1 inch.
2. Beat flour, sugar, butter and salt in large bowl on low speed until crumbly. (Mixture will be dry.)
3. Press firmly in pan.
4. Bake about 25 minutes or until filling is set. Cool completely.

Filling:
11/2 cups sugar
11/2 cups corn syrup
3 tablespoons butter, melted
11/2 teaspoons vanilla
4 eggs, slightly beaten
21/2 cups chopped pecans

1. Mix all ingredients except pecans in large bowl until well blended. Stir in pecans.
2. Pour over baked layer; spread evenly.
3. Bake about 25 minutes or until filling is set. Cool completely.

Note: I always line the baking pan with foil and let it stick up on the sides of the pan. That way you can just lift them off the pan to cut and it doesn't bubble over into your oven.

Yield: 60 squares

2. Blend confectioners sugar, cream cheese, 2 eggs and lemon flavoring. Mix well and pour over cake dough.
3. Bake at 350 degrees for 35 to 40 minutes. Cool one hour at room temperature. Cut into squares. Cover and cool in refrigerator overnight.
