Here's two of my favorite recipes:

DELISH FISH DISH: This recipe came from a Portuguese family in Gloucester, Mass. The men & woman are all great cooks and come from a long line of fishermen.

1 to 1 1/2 #'s of haddock, cod or your favorite white fish
1 tube of Ritz crackers
1/4 to 1/2 C (to your taste) grated parmesan and/or romano cheese
1/4 small bottle of Catalina salad dressing
1/4 cup red bell pepper
1/4 cup green bell pepper
1/4 cup chopped onions

Put Ritz crackers in a bag and crush w/rolling pin.
Saute the veggies in a touch of olive oil.
Mix the crackers, Catalina dressing & veggies in a bowl.
Arrange the fish in a baking dish or pan.
completly cover the fish with cracker/dressing mixture.
Bake uncovered at 350 degrees for 30-40 minutes.

The dressing & crackers can be reduced fat if you like.
