A good hot weather pie. Start right after breakfast and ready by suppertime.

BUY a ready made pie crust... such as graham cracker, or choc. cookie crust
This pie is refreshing, pretty to look at and tastes good too.

PINK LEMONADE PIE

1 Envelope Knox Unflavored Gelatin (borrow one from a neighbor)
1/4 cup cold water
1 can (6 oz) FROZEN LEMONADE or PINK LEMONADE CONCENTRATE, thawed
3/4 cup sugar
1 cup PET evaporated milk, and a few drops red food coloring.

Soften gelatin in cold water. Add lemonade concentrate. Stir constantly over low heat until gelatin dissolves, 3 or 4 min. Stir in sugar until dissolved. Chill until completely cool.
Chill evaporated milk in a metal bowl, in freezer, just until crystals begin to form around edges. Beat cold milk in bowl of electric mixer at high speed until stiff.
Fold in cooled gelatin mxiture and food coloring. Pour into pie crust and chill until firm; 3 to 4 hours.
Usually makes more filling than needed; put overage into small cups for kiddies.
