This can be made in large or small batches -- my family loves it all year long, and I serve it even at Thanksgiving.
Tomato Relish 2 parts tomatoes, peeled & cut into large chunks (see note re: peeling) 1 part diced celery 1 part diced green pepper 1 part diced red pepper 1 part whole kernal corn (from a can & drained) 1/2 part diced red onion (or more if you like it) Optional: 1 part cooked white rice and/or 1/2 part raisins
Mix everything carefully and measure the total quantity in a bowl. Pour over the following dressing:
For every 3 cups of salad mixture:
2 Tbl. white vinegar 2 Tbl. sugar 1/2 C. cold water 1/8 tsp. pepper
Chill several hours. When you're ready to serve it, drain it carefully and enjoy. I NEVER find any leftovers!
NOTE: To peel tomatoes, boil a small pot of water and carefully drop the tomatoes in for a few seconds. The skin will start to peel away within about 30 seconds. Carefully lift them out with a slotted spoon, allow to cool 'til they can be handled easily, and finish peeling with your fingers. It sounds complicated, but it's really pretty easy. |
