Dona-- Don't you just love beef stroganoff? I've been making this one for years. I THINK I got the recipe from Cosmopolitan magazine. Beef Stroganoff 1/4 c. flour 1/2 tsp. salt 1 lb. sirloin, cut in 1/4" strips 4 Tblsp. butter 1/2 c. onion, chopped 1 clove garlic, minced 2 Tblsp. cooking sherry 1 c. sliced mushrooms (fresh--preferably) 2 Tblsp. butter 3 Tblsp. flour 1 Tblsp. tomato paste 1 can condensed beef broth 1 c. sour cream Combine 1/4 c. flour and salt. Dredge meat in this and brown on both sides in 4 Tblsp. butter. Add mushrooms, onions and garlic. Cook 3-4 minutes until onion is tender. Remove this from skillet. Put 2 Tblsp. butter in pan drippings. When melted, blend in 3 Tblsp. flour. Add tomato paste. Slowly add broth, stirring constantly until mixture thickens. Return meat mixture to skillet. Stir in sherry and sour cream. Heat briefly. Serve on rice, noodles or potatoes. Hint: The meat cuts easily if half frozen.
