I made this this morning and it was a hit to young and old alike.

Breakfast Pizza

1 (8oz) tube refrigerated crescent rolls
1 pound bulk pork sausage
1 cup frozen shredded hash brown potatoes -- thawed
1 cup (4oz) shredded cheddar cheese
3 eggs
1/4 cup milk
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese
Unroll crescent dough and place on a greased 12" pizza pan; press seams together and press up sides of pan to form a crust. In a skillet, brown sausage over med. heat; drain and cool slightly. Sprinkle sausage, hash browns, and cheddar over crust. In a bowl, beat eggs, milk and pepper; pour over pizza. Sprinkle with Parmesan. Bake at 375 degrees for 28-30 min. or until golden brown. Let stand 10 min. before cutting.

NOTES : This is good, but I increased the eggs to 5. I used the same amount of everything else.

Mexican Lasagna

1 pound ground beef or turkey
1 medium onion -- chopped
2 cloves garlic -- minced
1 (14.5oz) can tomatoes -- undrained and choppe
1 (10oz) can enchilada sauce -- divided
1 1/2 cups (6oz) shredded cheddar cheese
1 (16oz) can refried beans
1 cup cottage cheese
1 egg -- beaten
6 to 8 corn tortillas
sour cream
taco sauce
Brown ground beef and drain well. Add tomatoes, onions, garlic, salt, and half the enchilada sauce. Bring to a boil; reduce heat and simmer 10-15 min., stirring occasionally. Stir in refried beans, set aside. Combine 1 cup cheese, cottage cheese and egg; stir well. Set aside. Layer 1/4th of the enchilada sauce, 2 tortillas, 1/2 meat mixture, cheese. Then place another layer of tortilla, then enchilada sauce, and remaining 1/2 cup cheese. Bake at 350 for 30-40 min. Let stand 5 min. before serving.

Steak with Vegetable Gravy

3/4 cup carrot -- finely chopped
3/4 cup onion -- finely chopped
1/2 cup celery -- finely chopped
1/4 cup green pepper -- finely chopped
2 lb beef round steak -- cut 3/4' THICK
1/2 CUP catsup
1 tbl vinegar
2 tbl flour
In crock pot, place carrot, onion, celery, and green pepper. Trim excess fat from steak; cut into 6 equal pieces. Place meat on top of veg. Sprinkle with salt and pepper. Combine catsup, vinegar, and 1/3 cup water; pour over meat. Cover and cook on low setting for 8-10 hrs. Remove meat. Skim excess fat from cooking liquid; pour mixture into a saucepan. Return meat to cooker. Blend 1/2 cup cold water slowly into the flour. Stir into veg. mixture. Cook and stir till thickened and bubbly. Place meat on platter. Spoon some gravy over; pass remaining gravy.

Macaroni and Cheese Pizza

1 (7oz) pkg elbow macaroni
8 slices skim-Amer. pasteurized process cheese prod
3 egg whites
2 tablespoons skim milk
1 (15oz) can tomato sauce
1 teaspoon oregano leaves
1 teaspoon sugar
1/4 teaspoon garlic powder
1 (4oz) can sliced mushrooms -- drained
1/2 cup green bell pepper -- cut in rings
Cook macaroni according to pkg. directions; drain. Preheat oven to 375 degrees. Cut 4 slices cheese product into small pieces; cut 4 remaining slices into triangles. In large bowl, combine egg whites, cheese pieces and milk; add hot macaroni; stir until cheese melts. Spread evenly into greased 12" pizza pan or 15x10" jellyroll pan. Bake on lowest rack in oven 20 min. Meanwhile, combine tomato sauce, oregano, sugar and garlic powder in med bowl. Spoon evenly over baked macaroni. Top with mushrooms, green pepper and cheese triangles. Return to oven and bake 10 min. or until cheese begins to melt. Let stand 5 min. before serving.

Chi Chi's Sweet Corn Cake

1/2 cup butter or margarine -- softened
1/3 cup masa harina
1/4 cup water
1 10oz pkg frozen corn -- thawed
1/3 cuo sugar
3 tbl yellow corn meal
2 tbl whipping cream
1/4 tsp baking powder
1/4 tsp salt
sliced chili peppers
chopped parsley
With an electric mixer, beat butter til fluffy. Gradually beat in masa harina. On low speed, beat in water. Place corn in bowl of food processor and pulse until chopped coursely. Stir in masa mixture. In a small bowl, stir together sugar, cornmeal,cream, baking powder, and salt. Stir into corn mixture. Spread in a greased 8" sq. baking pan. Cover with foil. Place in a larger pan and pour boiling water half way up the side of the smaller pan. Bake at 350 for 50 min., or til set. Remove smaller pan from water, uncover and let stand 15 min. Sprinkle with chilies and parsley, if desired.

Chicken Enchilada Soup

1 doz corn tortillas
veg oil
1 small onion -- chopped
1 clove garlic -- crushed
1 (4oz) can green chilies -- undrained
1 (14-1/2 oz) can beef broth
1 (10-3/40z) can chicken broth
1 (10-3/4oz) can cream of chicken soup
1 (6-3/4oz) can chunk style chicken
1 1/2 cups water
1 tbl steak sauce
2 tsp worcestershire sauce
1 tsp cumin
1 tsp chili powder
1/8 tsp pepper
3 cups shredded cheddar cheese or 2-3 cups light
chopped velvetta
paprika
Cut 6 tortilla into 1/2" wide strips; set aside. Cut remaining tortills into wedges and fry in hot oil until crisp; set aside. Saute onion and garlic in oil in Dutch oven. Add remaining ingred. except cheese and paprika; bring to a boil. Cover, reduce heat and simmer 1 hr. Add tortills strips and cheese; simmer, uncovered, 10 min. Sprinkle with paprika and serve with reserved chips.
