Chocolate

6 Oz High-quality semisweet chocolate chips or chunks
5 Tb. Boiling water
4 Eggs, separated
2 Tb. dark rum, or strong coffee or compatible liqueur such as Framboise (raspberry)
1 graham cracker crust (if a chocolate mousse pie is desired)

Process the chocolate in a food processor on high for a few seconds. Scrape the
the sides of the bowl with a knife if necessary. Add the water and process on
high for 10 seconds. Then add the yolks and rum/liqueur/coffee and blend until
smooth.

Meanwhile, beat the egg whites 'til stiff. Fold the chocolate into the egg whites. Pour mousse into ramekin cups (or, if you want to, into a graham cracker crust.) Pipe decoratively with sweetened whip cream if desired, and dot with fresh raspberries. It makes about 4-6 servings.
