5 Corn Tortillas, cut into thin strips 2 T. Oil (I use olive oil) 4 c. Chicken Broth 1/4 to 1/2 c. Chopped cooked chicken (Opt.) 1 med. tomato, peeled and chopped 4 green onions, chopped w/ part of tops 1/2 can chopped green chilies (Opt.) 2 T. chopped fresh cilantro Fresh lime juice Mont. Jack Cheese, grated
Saute tortilla strips in about 1/8" oil until crisp. Drain on paper towel. Bring Chicken broth to a boil and add chicken, tomato, onions, chilies and about 1/2 of your tortilla strips. Simmer for 20 min. Just before you serve, squeeze in lime and add remaining tortillas strips. Top each serving w/ cheese and sprinkle w/ cilantro. A slice of avocado on top is also a nice touch.
