Vicki, here's a very simple recipe:
1 C. high quality vanilla ice cream 8 oz. cream cheese, softened 1/4 C. powdered sugar 1 graham cracker pie shell
Beat the cream cheese and powdered sugar 'til very creamy; add the ice cream in small batches. Pour into the pie shell. You can top it with pie filling, if you like, or cut up fresh fruit.
This is a variation of another creamy cheesecake which I make frequently -- instead of the ice cream, use an 8-oz. container of thawed Cool Whip. It takes only minutes to prepare and everyone loves it!!
