Just though i'd throw this one in. It's the real pierogi recipe!.
It does take time, but it's well worth it.

8 c. flour 1\2 tsp. salt
4 eggs warm water
1\2 pt. sour cream mashed potatoes
shredded cheddar cheese


Mix eggs, sour cream and salt; add flour and warm water untill dough
feels like velvet. Add LITTLE water if needed. Roll out to medium thickness.
Cut out circles using round object ( I use a glass ) about 31\2 or 4 inch
in diameter. Dough is ready for filling. Make sure Pierogi's don't dry out
while waiting to be put into water. Drop Pierogi's 4 or 5 at a time in to
boiling water. They rise when done. Put into pan with melted butter and
chopped onions and coat all pierogi to prevent sticking. Fry with more butter
and onions. Or freeze.

Filling

Mash potatoes and cheese with alittle salt. NO liquid!!!!.
