Here are some of my favorites.
Lentil Salad Serves 2-3 Cook lentils according to package. Not mushy. Add raw, chopped carrots, frozen corn, and frozen peas (thawed of course). Season with vinaigrette dressing (I like Newman's Own dressing). Serve as salad.
Lenpato--somewhere of the net, lost name, sorry 1/2 cup lentils 3/4 cup brown rice 1 large sweet potato, cubed 1/2 onion, diced 2 cloves garlic, minced 1 tb fresh ginger, minced dash or two of cinnamon black pepper to taste dash nutmeg 1 tb sugar dash red pepper (cayenne) 3 or so cups water
In large saucepan, saute onion, garlic, and ginger over medium heat until soft. Add water-bring to boil. Add lentils, rice, sweet potato, and cinnamon. Cover, reduce heat and cook for 40 minutes. Add pepper, nutmeg, sugar, and red pepper. Taste and correct seasonings. Serve in bowl with some bread. Scoop it up with bread and a smile. I have also put this in a tortilla.
BBQ Lentils--my favorite 1 lb green lentils Cover with water according to package directions and cook until tender. Pour one full bottle of BBQ sauce in pot. Heat through. Good as a BBQ Lentil Soup the first day. It mades awesome sloppy joes the next day.
