Joan, here's the recipe that I promised. I have never tried it but my aunt says that it is great!
Family Sized Tuna Casserole
1 1/2 tbsp veg oil 3/4 c chopped celery 9 green onions, chopped 4 1/2 tbsp flour 3 c chicken stock not quite 1/2 tsp cayenne pepper and black pepper 1 1/2 c peas or diced carrots 1 can corn, drained 1/3 c parsley, chopped 1 egg white 4 1/2c mashed potato 3/4 c parmesan 1 1/2 tbsp bread crumbs, dried 3 cans tuna, drained
Heat oil in skillet and cook celery and onion for 1 minute. Add 1 1/2 tbsp water. Cover and cook on med-low for 4 minutes. Sprinkle with flour and cook 1 minute; slowly add chicken stock, cayenne and pepper. Cook until thickened. Stir in peas, corn and parsley. Remove from heat and stir in tuna. Pour mixture into a 10x13 baking dish. Lightly beat egg white; mix into potato and parmesan. Spread over mix and top with bread crumbs. *This recipe may also be halved and put into a 8x8 pan.
My aunt's hint: She adds a few drops of hot sauce into the chicken stock.
