I personally haven't tried these, but friends have and they love them!! I hope these are what you need.
Cream cheese Straberry Pie
1 baked 9 inch pie shell(graham crust will also work-do not bake) 1 pkg. (6oz) cream cheese-softened 1/2 cup powdered sugar 1 box (about 4 cups) fresh straberries 1/4 cup water 2/3 cup granulated sugar 4 teaspoons cornstarch Whipped cream for garnish
bake pie shell according to directions (usually 7 to 10 Minutes. Cool. blend cream cheese and powdered sugar spread into bottom of pastry shell. Rinse berries, hull and sort, saving the largest and prettiest berries for the top. Crush remaining berries, enough for 1 cup of mashed berries. in small saucepan mix water, suger and cornstarch. add berries. bring to a boil. cook for 2 minutes or until thick and clear. cool. cut whole berries in half and press cut side down into cream cheese mixture. spoon cooled mixture evenly over berries. chill 3 to 4 hours or until firm. when ready to serve add whipped cream to pie, just leaving enough berry to peek through, or serve the whipped cream on the side.
Peppermint Fudge Pie
8 ozs. semisweet chocolate chips 2 cup minature marshmallows 1/4 cup milk 2 tablespoons Chocolate mint liqueur (can be substituted with 1 1/2 tablespoon peppermint extract) 3 cups whipped cream 1 chocolate cookie pie crust 2 tablespoons crushed peppermint candy
melt chips on low heat or in microwave (according to pkg.directions) stir in liqueur, cool to room temp. fold in 1 1/2 cups whipped cream. spoon into pie shell. fold crushed candies into remaining whipped cream. pour over layer in shell. cover and freeze until firm, about three hours. let stand 3 to 5 minutes before serving. keep leftovers in freezer. |
