Hi, This is not a recipe from scratch but easy and absolutely delicious from my Brand Names (low-fat, low-cal cookbook). In fact, I just made it last night and my friends just love it. I make it very often since it's always a hit. DANISH ORANGE LOAVES (MAKES 2 LOAVES) Cake: 1 pkg. Duncan Hines Moist Deluxe Yellow Cake Mix 1 pkg (4-serving size) vanilla instant pudding & pie filling 4 eggs 1 cup dairy sour cream 1/3 cup canola oil 1 tabl. orange extract
Frosting: 2-1/4 cups confectioners sugar 3 tabl. butter, melted 2-3 tabl. orange juice 1 tabl. grated orange peel
1) Preheat oven to 350 degrees. Grease and flour two 9x5x3" loaf pans. 2) For cake: combine cake mix, pudding mix, eggs, sour cream & oil in large mixing bowl. Beat at med. speed w/electric mixer for 3 minutes. Pour batter into pans and bake at 350 for 50-60 min. or until wooden toothpick inserted in center comes out clean. Cool in pans 15 minutes. Loosen from pans. Invert onto cooling racks. Turn right side up and cool completely.
3) For frosting: combine confectioners sugar, melted butter & 1 tabl. orange juice in small bowl. Beat at low speed w/electric mixer until blended. Add remaining juice 1 teas. at a time, until frosing is of spreading consistency. Fold in orange rind and spread frosting over cooled loaves. Garnish as desired.
Tip: This recipe can also be baked in a 10" bundt pan or tube pan for 50-60 minutes or until toothpick inserted in center comes out clean. (I have never baked anything except for the loaves). Hope you enjoy it.
