When your bananas are past their "prime" and you don't have time to cook with them, just mash them up and pack the pulp into a plastic freezer container. You can add to it periodically. Just chop off a chunk when needed and thaw it out for bread, pancakes, etc. Also, it's great used frozen for smoothies, milk shakes and other blender drinks. The frozen pulp gets dark in color, but the flavor and texture survive. I haven't thrown away a banana in years!
