hi, Pat. I do not know if this would be appropriate, but it's what I had for my wedding breakfast (because it's my favorite breakfast). You can make it all the night before and just bake it in the oven the next morning. You could do several batches if people are eating at different times (and put it on a hot-plate while serving). If nothing else, it's yummy to have any other time, too.

Breakfast Casserole

Serves 6 - 8 (more like 6, in my opinion)

1 lb. hot sausage (Owen's or Jimmy Dean), cooked
6 - 8 eggs
6 slices bread, cubed
1 c. extra sharp cheddar cheese, grated
2 c. milk
1 tsp. salt
1 tsp. dry mustard

Cook sausage and drain grease.
Combine everything together -- You can whip eggs/egg whites
separately and fold them in if you want it a little fluffier.
You can refrigerate overnight (preferred) or you can skip that part.
Pour into a 9x13 dish.

Bake in oven (uncovered) on 350 degrees for 35 minutes.
Let stand about 10 minutes before cutting.
