hi, val,
i don't think we put honey in the ginger chicken dish for women comfinement period. if not mistaken, mom used to make "sesame oil chicken" for my aunty when she had my two cousins. (Not the regular sesame chicken you get in a Chinese restaurant restaurant but a soupy white stewed chicken with sesame oil, rice wine, salt and water.)
**I could be wrong about the honey chicken dish you mentioned as i have never had a child myself! But in case this is the one you were told, here is how you make it.
Get an free range chicken. (We don't use farm-raised chicken for this purpose. you must get a good "country chicken.) clean inside out, cut into large pieces. (Keep the feets for extra flavor but rid of all organs, neck and head.)
A large knob of OLD ginger. it must be OLD ginger for good flavor and it's healing property. Young ginger won't do. about 2 - 3 T. (sometimes up to more than 1/4 c!) of sesame oil. This might sound too much but Chinese believe it serves the purpose for nurishing a nursing mom. about 1/4 C good rice wine (Haw Tiew seems to be very popular or rose wine, but very expensive.) enough water to cover the chicken. Stew the chicken until fragrant and meat is tender. (Country chicken takes very long to be soft.) add salt (and white pepper if liked) to taste. Usually, the nursing mom should take the soup and just little bit chicken meal. however, my aunty hates the smell of sesame chicken (making her gag) so she refused to eat it unless the sesame oil was skim off!!!
