Linda: First, a suggestion--when you are looking for something, use the ISO button (in search of); using the recipe(tried): button means that you are posting a recipe that you have tried. I looked at your message because I wanted to compare your recipe to mine! Here's my recipe for you to try. My family has used the recipe for longer than I can remember. Hope you like it!

German Potato Salad

6 medium potatoes, peeled, boiled, and cubed
1/2-1# bacon (depends on how much you like bacon!)
1 med onion, chopped
vinegar
salt and pepper

Dice the bacon and fry. Towards the end of the cooking, add onions and saute til translucent. Drain off some, but not all, of the grease--you'll need enough to give the potatoes a light coating of the grease for flavor. Add potatoes and mix gently (you don't want to mash the potatoes). Add about 1/2 cup vinegar ( I use closer to a cup, but you'll need to adjust to your taste). Add salt and pepper to taste ( I usually don't add salt, just a lot of pepper). Heat through. Taste and adjust seasonings (vinegar, bacon grease, salt, and pepper). Serve warm.
