Monday Dinner in New Orleans (Days of old, because it was wash day, and this dish could be cooked without a lot of attention)
RED BEANS AND RICE 1 Lb. red beans 1 ham bone 1 large onion, chopped 1 cup chopped green onions (tops and bottoms) 1/4 cup chopped green pepper 1/4 cup chopped parsley 1/4 cup bacon fat or butter 2 bay leaves salt to taste hot pepper to taste, cayenne or tabasco 1/2 lb. chopped ham or sliced cooked link sausage Hot cooked rice
Wash and sort beans, cover beans with water and bring toa boil. Let beans boil several minutes. Remove from heat, cover, and soak overnight.
Heat bean mixture to boiling, add remaining ingredients, except rice, meat, salt, and pepper. Cover and simmer for 2 hours, adding water as needed, until beans are tender. Add meat, salt and pepper, simmer for 10 minutes. Serve over hot cooked rice. Remove bay leaves before serving.
FRIED CATFISH 1/4 to 1/2 lb. catfish filets per person Sprinkle both sides with salt and black pepper, can add red pepper if desired. Bread in fish fry, fry in hot oil (350 degrees) until golden brown. Serve with French fries, and hushpuppies. This can be Louisiana or Mississippi.
PRALINES 1 1/2 cups white sugar 3/4 cups brown sugar dash salt 1/2 cup evaporated milk 1/2 stick oleomargarine or butter 2 cups pecans 1 tsp. vanilla
Cook sugar, milk, and salt until it boils, cook to the soft ball stage, add butter or margarine and let it remain on the fire until completely melted. Remove from the heat and beat until thick. Add the nuts and vanilla. Drop by teaspoons onto a buttered pan or wax paper. Reheat if gets too thick.
