This recipe does tastes like lemon curd & is always a big hit.
Makes 2 1/2 cups

1 cup sugar
2 tablespoons flour
1/4 teaspoon salt
2 eggs, well beaten
Juice of one lemon
1 cup pineapple juice
1 heaping teaspoon butter
1 cup heavy cream

Mix dry ingredients. Add eggs, then juice. Cook slowly until thick. Add butter. Let mixture cool.Whip cream and fold into cooled mixture. Will keep in the refigerator for a week. Serve on a frest fruit salad, or on a fruit crepe.
