Baked Rice Pudding
Combine 2 c. milk, 3 slightly beaten eggs, 1./2c. sugar, 1 tsp. vanilla and 1/2 tsp. salt. Mix well. Add 1-3/4 to 2 cups cooked long grain rice and 1/3-1/2 cup raisins. Turn into 10x6x1-3/4 baking dish. Bake uncovered at 350F for 30 minutes. Stir. Sprinkle with ground nutmeg. Continue baking until knife inserted halfway between center and edge of dish comes out clean, approximately 30 minutes. NOTES : A good way to use leftover rice. |
