Thanks Sally.... I ended up finding a few recipes here at recipelink that as part of the whole recipe you ended up with cracklins... there was a recipe for Cuban Pork posted by Angels F on 5/8/98.... you slow roast the pork shoulder roast with skin on for 3 hours at 325 degrees... you end up with cracklins... it's under Internation Recipes
