I hope one of the following will help. I don't know what dry mincemeat is? And where you can purchase it? If you do, please let me know. All I have ever seen as far as mincemeat goes it the jar kind. Thanks.
Alaska Mincemeat Cake
2 c. water 1 3/4 c. sugar 3/4 c. margarine 1 pkg. dry mincemeat 3 1/4 c. flour 2 tsp. baking soda 1 tsp. salt 1 c. raisins 1 c. chopped apples 1/2 c. chopped nuts
Put water, sugar, margarine and mincemeat into a saucepan and bring to a boil until margarine, sugar and mincemeat are melted. Let cool; set aside. Add the rest of ingredients and bake for 1 hour at 325 degrees to 350 degrees in a greased tube pan or 2 loaf pans. If baked in loaf pans, less baking time is required. This is a very moist cake much like a fruit cake and needs no frosting. Confectioners sugar may be sprinkled on top of cake.
Alaskan Mincemeat Cake
2 c. water 1 3/4 c. sugar 3/4 c. margarine 1 (9 oz.) pkg. mincemeat
Bring to boil and boil for 3 minutes.
3 1/2 c. flour 2 tsp. baking soda 1 tsp. salt
Sift flour, baking soda and salt together. Add to cooled mincemeat mixture and stir in 1 cup raisins and 1/2 cup walnuts. Bake in 10-inch tube pan at 350 degrees for 1 hour. Dust top with icing sugar.

2 c. water 1 3/4 c. sugar 3/4 c. butter or margarine 2 eggs (add later) 1 (9 oz.) pkg. mincemeat, broken 3 1/4 c. flour 2 tsp. soda 1 tsp. salt 1 c. raisins 1/2 c. chopped walnuts
Combine water, sugar, butter and mincemeat. Bring to a rolling boil, boil 3 minutes, stirring occasionally. Remove from heat and cool. Then add beaten eggs. Sift together flour, soda and salt. Add to cold mincemeat mixture. Stir in walnuts and raisins. Turn into 9 or 10-inch tube pan (only bottom well greased and floured). Bake at 350 degrees for 60 or 65 minutes. Cool in pan about 1 hour before turning out. |
