Cinnamon Coffee Bars
1/4 cup shortening 1 cup brown sugar 1 egg 1/2 cup coffee 1 1/2 cups flour 1 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1/2 to 1 tsp. cinnamon 1/2 cup raisins 1/4 cup chopped nuts
Cream shortening, brown sugar, and egg.
Stir the coffee gradually into a combined mixture of flour, baking powder, soda, salt, and cinnamon. Stir into the shortening mixture. Blend in the raisins and chopped nuts. Spread into a greased and floured 9 x 13 inch pan.
Bake at 350 degrees for 15 to 20 minutes. Spread a thin icing on top.
Icing: Use enough powdered sugar to dissolve in 1 teaspoon of melted butter, 1/8 teaspoon vanilla and a little milk.
