Honey Taffy
3 cups granulated sugar 1 cup whipping cream 1 cup honey 1 tablespoon butter 1/8 teaspoon salt
1. Combine ingredients in large heavy saucepan. 2. Bring to boil over medium heat stirring constantly. 3. Continue stirring and cook until mixture reaches soft crack stage (270F). 4. Pour mixture onto an oiled marble slab {cool, oiled cookie sheet]. 5. Allow to cool slightly, until it can be handled comfortably. 6. Butter your hands, find a partner, pull and twist taffy into ropes, until it lightens in color. 7. Brakes ropes into 2 inch long pieces. [keep a pair of oiled kitchen scissors handy] 8. Wrap pieces in waxed paper and twist ends.
Basic Honey Taffy
1 cup honey
Cook honey to hard crack stage (285F) stirring constantly. Pour onto buttered marble slab. As soon as outside edges cool enough to touch,fold to center and make long roll. Start stretching or pulling while hot. Pull until honey becomes light and porous and small strings develop. Cut into short pieces. Place in paper lined metal cans for two days to soften. OLD-FASHIONED HONEY TAFFY
4 c. honey 1/2 tsp. soda
Bring these ingredients to a boil. Skim off foam. Boil slowly until firm ball stage. Pour into large, flat, buttered pan. Cool until comfortable to hold it in your hands. Stretch until it turns light colored and becomes too rigid to pull any longer. Lay on cutting board and cut or break into bite-size pieces.
HONEY TAFFY
2 cups honey 1 cup sugar 1 cup cream
Cook over medium heat until it reaches a hard ball stage. Pour onto a buttered platter. When cool, pull until it is a golden color. |
