Maple Walnut Frosting Source: Carol Makes 2 cups
2 egg whites 1 1/4 cups packed brown sugar 1/4 cup maple syrup 3 tablespoons cold water 1/8 teaspoon cream of tartar 1/4 cup chopped walnuts Place egg whites, brown sugar, maple syrup, water, and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until frosting has a good spreading consistency, and will stand in peaks. Remove from heat. Fill and frost cake. Sprinkle the top with chopped nuts. Makes 12 servings
