Ragu Carrot Cake

1 cup butter
2 cups sugar
4 eggs
1 1/2 cups grated carrots
2 1/2 cups flour
3/4 cup Ragu tomato sauce
1 tbsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 tsp. grated lemon rind
1 tsp. vanilla
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Grease and flour a 13x9x2-inch baking pan.

In separate bowl, cream butter and sugar until fluffy. Add remaining ingredients except walnuts, mix 3 minutes on medium speed, or until thoroughly combined. Stir in walnuts. Evenly spread batter in pan.

Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Frost with cream cheese frosting.

Tomato Spice Cake

2 cups flour
1 cup sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
1 (8 oz.) can tomato sauce
1 tsp. baking soda
1 egg
1/2 cup oil
1 cup nuts
1 cup raisins

Sift together flour, sugar, baking powder, spices, and salt.

Add tomato sauce in which baking soda has been added and dissolved.

Add egg, oil, nuts, and raisins; mix together. Pour into 2 greased 8-inch layer cake pans.

Bake at 350 degrees for 30 minutes or until done.

I know these aren't exactly what you asked for but maybe if the original doesn't turn up you can experiment with these. Let us know if you come up with anything!
