HOLIDAY ITALIAN COOKIES
6 cups flour 1 1/2 cups sugar 6 tsp. baking powder 6 eggs 3/4 cup oil 1 (8 oz.) pkg. cream cheese, softened 2 tsp. anise flavoring 2 tsp. vanilla extract 2 tsp. almond extract
Preheat oven to 400 degrees F.
Mix flour, sugar, and baking powder together in a very large bowl.
Combine the eggs and oil and mix into the dry ingredients. Stir well.
Add cream cheese. Mix very well. Stir in anise, vanilla and almond. Roll into balls. Place on ungreased baking sheets.
Bake at 400 degrees 7-10 minutes.
Ice when cool with confectioners' sugar and milk icing, and top with colored sprinkles.
Makes 9 dozen cookies
ITALIAN COOKIES
2 sticks (1 cup) margarine, room temperature 1 (8 oz.) pkg. cream cheese, softened 1 cup sugar 1 tsp. lemon flavoring 2 heaping tbsp. baking powder 5 cups flour, divided use 5 eggs
Preheat oven to 375 degrees F.
Beat margarine, cream cheese, and sugar together until light and fluffy. Stir in lemon flavoring. Add the baking powder and half of the flour. Add 1 egg at a time, then add the rest of the flour. If mixture is too thick and hard use your hands to mix. Roll the cookies into balls the size of walnuts. Place on ungreased baking sheets.
Bake at 375 degrees for 10-12 minutes. Do Not Overbake.
Frosting: Confectioner' sugar, milk, almond or lemon flavoring.
Mix together. Frost cookies. Decorate cookies with chocolate sprinkles or whatever you desire.
