Dark Chocolate Potato Truffles Makes 40
30 grams dark chocolate buttons (chocolate chips?) 2 1/2 Tbsp cream 125 grams butter 1/2 medium potato, cooked and mashed 3/4 cup coconut 1/2 cup almond meal 2 1/2 Tbsp Drambuie or other liquer 100 grams dark chocolate buttons
Place bowl over saucepan of boiling water. Do not allow bowl to touch water.
Add chocolate, cream and butter. Stir until the mix has evenly melted and remove from the heat.
In a separate bowl mix the almond meal, mashed potato, coconut and liquer.
Combine both mixtures, mix gently. Refrigerate until set.
Melt extra chocolate as before. Set aside for 5 minutes. Dip each truffle into the chocolate to coat.
Place on tray. Refrigerate for 15 minutes.
