TENNESSEE LASAGNA
MEAT SAUCE:
4 stalks of celery, chopped
2 onions, chopped coarsely
2 cloves garlic, diced
1 green pepper, chopped coarsely
vegetable oil
1 pkg fresh mushrooms, sliced or chopped
2 lb. ground chuck
2 tablespoons chili powder
heaping 1/2 teaspoon ground cumin
1/4 teaspoon oregano
dash of red pepper flakes
Salt (to taste)
4 cups canned tomatoes
1 cup (8 oz can) tomato sauce
TO ASSEMBLE:
1/2 lb. elbow macaroni, cooked
1 lb. Sharp Cheddar cheese, grated, divided
1/2 lb. butter or margarine, cut in chunks
Grated parmesan cheese (for top)
For the meat sauce:
Saute celery, onions, garlic and pepper in oil; remove from oil. Saute mushrooms, adding more oil if needed; remove mushrooms. Brown ground chuck in oil. Add chili powder, cumin, oregano, red pepper flakes, and salt. Add tomatoes and tomato sauce. Add sauteed vegetables. Simmer for 1 1/2 to 2 hours.
To assemble:
Put a layer of cooked macaroni in bottom of large shallow pan; then layer of cheese and butter; then layer of meat sauce. Repeat layers ending with grated cheese and topping with Parmesan cheese.
Bake in 350 degree oven for about 45 minutes.
