PUMPKIN COOKIES
1 cup granulated (white) sugar 1 cup Crisco (vegetable shortening) 1 cup canned pumpkin 1 egg 2 cups flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 1/2 cup chopped nuts (optional) 1/2 cup raisins or chopped dates (optional) 1 tsp. vanilla FOR THE ICING: 1 cup powdered sugar 1/2 cup brown sugar 4 tbsp. milk 3 tbsp. butter 1 tsp. vanilla
Preheat oven to 350 degrees F. Grease cookie sheets.
Cream sugar and Crisco together. Add pumpkin and egg. Mix in next 5 ingredients. Add nuts, raisins or dates, and 1 teaspoon vanilla. Drop from spoons onto cookie sheets.
Bake for 12-15 minutes at 350 degrees. Remove from cookie sheets and place on racks to cool.
FOR THE ICING: Combine ingredients for icing and spread over cooled cookies.
