My grandmother and me would make PUMPKIN CANDY (DULCE DE CALABASA) the day after Halloween. (She didn't like wasting the Jack-O-Lantern)

Here's the recipe:

1 cup water
2 cups sugar (anyone you would like to use)
Pumpkin cut into candy size pieces
1 cup chopped pecans

Bring sugar and water to a boil. Slowly drop in the pumpkin pieces into the boiling mixture. Boil pumpkin pieces until tender but not soft. Allow to cool on wax paper and then sprinkle with the pecans.
