QUAKER OATS PRIZE-WINNING MEAT LOAF Servings: 8
1 1/2 pounds lean ground beef 1 cup tomato juice 3/4 cup Quaker Oats (quick or old fashioned, uncooked) 1 egg 1/4 cup chopped onion 1/2 tsp salt (optional) 1/4 tsp pepper
Heat oven to 350 degrees F.
Combine all ingredients; mix lighly but thoroughly. Pat into 8x4-inch inch loaf pan.
Bake 1 hour or until meat is no longer pink and juices run clear. Drain; let stand 5 minutes before serving.
MIX-INS: Customize meat loaf by adding one of the following mix-ins with meat loaf ingredients; proceed as directed above.
- 1/2 cup frozen (thawed) or canned corn (drained) - 1/2 cup chopped green or red bell pepper - One 2.5-oune jar sliced mushrooms, drained - 1/3 cup grated Parmesan cheese - 2 Tbsp finely chopped parsley or cilantro
TOPPINGS: - Sprinkle with 1 cup shredded cheese after removing meat loaf from oven and draining; let stand 5 minutes before serving. - Spoon ready-prepared spaghetti sause, pizza sauce or salsa over each serving
