ORANGE-COCONUT CAKE
1 1/2 cups sugar 3/4 cup shortening 3 eggs Juice and zest from 1 orange, divided use 3 cups flour 3/4 tsp. salt 3/4 cup water 1 cup coconut, divided use Orange rind, grated
Preheat oven to 350 degrees F. Grease 2 loaf pans.
Cream sugar, shortening, eggs, and orange juice. Mix well.
Sift flour and salt, add to creamed mixture, alternately with water, blend well. Add 1/2 cup coconut to cake batter. Pour into prepared pans.
Bake at 350 degrees for 30 minutes in two greased loaf pans. Remove from pans to cool.
Frost cooled cakes as desired. Rub remaining coconut with orange rind and sprinkle over frosting.

Hi Lorna,
This cake recipe fits your description of rubbing the coconut with orange zest but the recipe wasn't sourced so I don't know it's origin. Also, I would be tempted to bake this recipe in layer cake pans or 9-inch square pans. Some people refer to 9-inch squares as loaves so that could be what was meant here. I hope this brings you at least a step closer to recreating the recipe.
