I enjoyed the posts about kutia. We make it every year for the Christmas Eve supper. My sister says that no matter how many people you have, one cup of wheat is always plenty since many will not eat it, if they have any choice. Incidentally, it is easy to find wheat in a bulk food store. It is sometimes sold as wheat berries. My bulk food store sells wheat with and without the bran. At any rate, since I had a large quantity left over, I used it to make a white bread and it was wonderful. I put some wheat bread sponge and then flour, yeast and a little oil. If the liquid is not sufficent in the kutia, add more water or scalded milk, and proceed as any bread. It made a wonderful artisanal type loaf. Honey, poppyseed, wheatberry, with a few raisins and almonds. I think I will make it frequently.
