Dear Linda,

I don't know if this is the exact recipe you're looking for and I haven't tried it so you might want to give it a test run before making it for guests. Have a happy christening!

RICE PUDDING

1/2 gallon whole milk
1 1/2 cups sugar
1 cup rice
1 cup cooked raisins (simmer in hot water until plump and drain)
3 whole eggs, beaten
1 box vanilla tapioca pudding mix
1 tbsp. vanilla

Mix 1/2 gallon milk with sugar and rice in large pot. Cook until it comes to a boil. Reduce heat and simmer at a low boil about 1/2 hour, stirring frequently.

Add remaining ingredients, mix well and pour into a 13x9x2-inch pan.

Bake in a preheated 350 degrees F oven about 45 minutes or until knife inserted comes out clean. After it starts to set, stir lightly so that raisins spread throughout the pudding. Top with nutmeg.
