Dinah,

Here is a recipe I have tried. I used the quick and easy version (no yeast), and we all thought it tasted pretty authentic. As you will read, the "brewed" recipe is on the back of the bottle of McCormick's Root Beer extract. It has been a couple of years since I made this, but I was surprised that I didn't have any trouble finding Root Beer Extract in our local supermarkets. If you try it, I hope you will let me know what you think.

EASY HOMEMADE ROOT BEER
Source: McCormick & Company, Inc.
Makes 6 (1 cup) servings

"Here's a quick and easy way to enjoy homemade root beer almost instantly. If you crave the old-fashioned version, made with yeast and fermented a few days, just follow the directions on the back of the McCormick Root Beer Concentrate package."

1 1/2 cups boiling water
3/4 cup sugar
1 1/2 teaspoons McCormick® Root Beer Concentrate
1 liter soda water, seltzer or club soda, chilled

Combine sugar and boiling water; stir until dissolved. Add root beer concentrate. Chill.

When ready to serve, combine root beer mixture with soda water. Stir slowly to mix. Serve immediately

Also, if you do a search here at Recipe Link for "homemade root beer", you will find a couple of recipes using the longer method.
