SEAFOAM CANDY (BROWN SUGAR)

1 1/2 c. light brown sugar
1/2 c. white sugar
1/2 c. hot water
1/4 c. light corn syrup
1/4 tsp. salt
2 egg whites
1 tsp. vanilla
1/2 c. pecan pieces (optional)

Butter sides of heavy quart pan. Combine sugar, water,
corn syrup and salt. Cook, stirring constantly, until mixture comes to a boil. Cook until hard boil stage (250 degrees) without stirring. Remove from heat.

Immediately beat egg whites until stiff. Pour hot syrup in a thin stream over beaten egg whites, beating constantly with mixer on high speed. Add vanilla; continue beating until mixture forms soft peaks and begins to lose gloss (about 10 minutes).

Drop from tablespoon onto cookie sheet covered with waxed paper.

Makes about 2 to 3 dozen pieces.
