GRANNIE'S APPLESAUCE CAKE

3 cups flour
2 cups sugar
1 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. ground nutmeg
2 cups applesauce
3/4 cup butter or margarine, melted
2 level tsp. baking soda
1 cup raisins
1 1/2 cups chopped pecans
Pineapple Icing (recipe follows)

Preheat oven to 325 degrees F. Grease a Bundt pan or 2 loaf pans.

Mix flour, sugar, cinnamon, cloves, and nutmeg together; set aside.

Mix applesauce, melted butter, and baking soda together. Stir in flour mixture. Stir in raisins and pecans.

Bake at 325 degrees for 1 hour in Bundt pan or two loaf pans.

PINEAPPLE ICING

1 egg
1 1/4 cups sugar
1 (8 oz.) can (1 cup) crushed pineapple (didn't say whether to drain)
1 tbsp. flour
1 tbsp. butter

Beat egg to lemon color. Combine with other ingredients in a saucepan. Cook until thickened.

Hi Brenda,

This isn't my Grandmother's recipe and unfortunately I don't know the original source. You could give it a try replacing the pineapple with applesauce.
