Diana, found this, not sure it's what you are looking for....
CARROT FUDGE
3 1/2 cups sugar
1 1/2 cups raw grated carrots
1/2 cup sweetened condensed milk
1/2 cup water
1 tsp. lemon extract
Combine sugar, carrots, milk and water. Boil until a little bit of the mixture forms a firm ball when dropped in cold water. Add extract. Beat until creamy. Pour into buttered pan. Cool - cut in 1 inch squares.
