My mother used to make theses beans every year; Her family was descended from German

SCHNITZEL BEANS IN CROCK

4 cups fresh green beans, sliced julienne and blanched
1 cup white sugar
1 cup apple cider
1 medium onion, sliced very thin
1/2 tsp non-iodized salt
dash pepper

Combine sugar and vinegar in sauce pan. Heat to boil; reduce heat and simmer for a couple minutes.

Place beans and onions in crock, Add salt and pepper. Pour hot vinegar mixture over beans. Add more water to cover beans. Place cheese cloth and weighted board to cover tightly.

Let stand overnight or a few days or till company comes !! Scrape scum off every three days or so.

My mother made a casserole with fried bacon and whole cream.
